Till a few years ago, cauliflower used to be a vegetable that is only available during winter but of late cauliflower is available year around especially in big cities. Referred to as the aristocrat of the cabbage family, the flowers are also eaten raw at times. While buying, look for fresh cauliflowers with compact white heads and green fresh looking leaves. Avoid and reject any loose or spread out heads – they are a sure sign of over maturity.

Ingredients for Gobhi Keema Recipe

  • Cauliflower 1 medium

  • Milk 1 cup

  • Green chillies 2

  • Oil 3-4 tablespoons

  • Asafoetida 1/4 teaspoon

  • Cumin seeds 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Salt to taste

  • Dried mango powder 1 teaspoon

  • Red chilli powder 1 teaspoon

  • Lemon juice 1

Method

Step 1

Finely chop ginger and green chillies. Heat oil in a non-stick pan, add asafoetida, cumin seeds, ginger and green chillies and sauté for a minute.

Step 2

Grate cauliflower into the pan and mix well.

Step 3

Add turmeric powder, salt, dried mango powder, red chilli powder and mix well.

Step 4

Cover and cook for 8-10 minutes. Add milk and mix.

Step 5

Cover and cook for 2-3 minutes. Add lemon juice, cover and cook again. Serve hot.
