Till a few years ago, cauliflower used to be a vegetable that is only available during winter but of late cauliflower is available year around especially in big cities. Referred to as the aristocrat of the cabbage family, the flowers are also eaten raw at times. While buying, look for fresh cauliflowers with compact white heads and green fresh looking leaves. Avoid and reject any loose or spread out heads – they are a sure sign of over maturity.

Ingredients for Gobhi Kasoori Recipe

  • Cauliflower separated into florets 1 medium

  • Dried Fenugreek leaves roasted 2 tablespoons

  • Onion 2 medium

  • Oil 2 tbsps + to deep fry

  • Mustard seeds 1/2 teaspoon

  • Green chilli 3

  • Tomato 1 medium

  • Ginger paste 2 teaspoons

  • Garlic paste 1/2 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Coriander powder 2 teaspoons

  • Yogurt 1/2 cup

  • Salt to taste


Step 1

Chop onions. Heat 2 tbsps oil in a non stick pan. Add mustard seeds and let them splutter.

Step 2

Separate the florets of cauliflower and soak them in salted water. Drain well and pat them dry. Heat sufficient oil in a kadai and deep fry the florets. Drain on absorbent paper. Chop green chillies.

Step 3

Add onions to the pan and sauté. Chop tomato. Add ginger paste and garlic paste to the pan and sauté. Add tomato and green chillies and continue to sauté.

Step 4

Add turmeric powder and coriander powder and mix well. Add yogurt and mix well and cook.

Step 5

Add kasoori methi powder and salt and mix well. Add cauliflower and mix well. Cook for 2 minutes. Serve hot.
