Thai food is an original and rich amalgam of aromas, subtle blends of herbs and spices and contrasting textures and tastes. It contains flavours and techniques that are familiar from Chinese, Indian and Japanese cooking, but they have been so skilfully combined and refined that the resulting dishes have a new and exciting character.

Fundamentally an aromatic marriage of centuries – old Eastern and Western influences, the chief characteristics being who cooks it, for whom it is cooked, for what occasion and where it is cooked. In short Thai dishes can be extremely personal to the cook, how they are refined for particular tastes, how they befit a special function or festival and where they originate. The cuisine has its roots in a waterborne lifestyle, with aquatic animals, plants and herbs as major ingredients.
Thai cuisine is inextricably interwoven with culture, a mystical mix of fragrant flavours and intriguing history:  given the country’s historical Indian roots - Hindu Buddhism was bought here centuries ago, so many Thai curries are redolent with chillies, garlic, cardamom, cloves, cinnamon, and onions.

Ingredients for Fried Fish in Black Bean Sauce Recipe

  • Fish fillets basa cut into medium pieces 2

  • Black bean sauce 1 tablespoon

  • Oil for deep-frying

  • Cornflour/ corn starch 3 tablespoons

  • Crushed black peppercorns to taste

  • Salt to taste

  • Sesame oil (til oil) 1 tablespoon

  • Onion cut into cubes and layers separated 1 medium

  • Spring onion bulbs chopped 2

  • Spring onion greens chopped 2 tablespoons for garnishing

  • Ginger sliced ½ inch

  • Green capsicum diced ½ medium

  • Button mushrooms sliced 6-7

  • Fish sauce 1 tablespoon

  • Sugar a pinch

  • White sesame seeds for garnishing

Method

Step 1

Heat sufficient oil in a pan.

Step 2

Put fish fillets, 2 tablespoons cornstarch, crushed peppercorns and salt in a bowl and mix well. Slide the fillets into hot oil and deep-fry till golden and crisp. Drain on absorbent paper.

Step 3

Heat sesame oil in a non-stick pan. Add onion and sauté till golden. Add spring onion bulbs and 1 tablespoon spring onion greens and mix well. Add ginger and green capsicum, mix and sauté for a minute. Add mushrooms, mix and remove the pan from heat.

Step 4

To prepare sauce, put black bean sauce, fish sauce, crushed peppercorns, salt and sugar in a bowl and mix well.

Step 5

Mix remaining cornstarch with some water to make a smooth slurry.

Step 6

Place the vegetable pan back on heat. Add fried fish and mix well. Add black bean sauce mixture and mix again.

Step 7

Add cornstarch slurry, mix and cook on high heat for a minute. Add remaining spring onion greens and mix well.

Step 8

Serve hot garnished with spring onion greens and sesame seeds.
