Ingredients
- 300 grams firm tofu, grated
- 8 brown bread slices
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- 1 medium onion, finely chopped
- 1 small green capsicum, finely chopped
- Salt to taste
- ½ teaspoon red chilli powder
- 1 green chilli, finely chopped
- A pinch of turmeric powder
- 1 small tomato, seeded and chopped
- 2 tablespoons chopped fresh coriander leaves
- Butter for applying
- Mint and coriander chutney for applying
- Tomato ketchup to serve
Method
- Heat oil in a non-stick pan, add cumin seeds and let them change colour.
- Add onion and mix well and saute till golden brown. Add green capsicum, mix and sauté for 1 minute.
- Add salt, red chilli powder and green chilli and mix well. Add turmeric powder, mix well and saute for 1 minute.
- Add tomato, mix and sauté for 1 minute. Add grated tofu, mix till well combined and saute for a few seconds. Switch off the heat.
- Add coriander leaves and mix well.
- Apply some butter on one side of each bread slice and apply some mint and coriander chutney over it. Spread a generous portion of the tofu bhurji over 4 bread slices and cover with the remaining bread slices with the chutney side facing down.
- Heat a non-stick electric griller, brush with some butter. Place the sandwiches, one at a time, and grill for 4-5 minutes or till done.
- Diagonally halve the sandwiches, arrange them on a serving plate and serve hot with tomato ketchup.
