Ingredients
- 2 tablespoons finely chopped lemongrass
- 300 grams firm tofu, cut into 1-inch rectangular pieces
- 3-4 tablespoons oil
- 1 tablespoon finely chopped ginger
- 1½ tablespoons finely chopped garlic
- 1-2 fresh red chillies, finely chopped
- 1 small onion, cut into thick strips
- 2 teaspoons soy sauce
- Salt to taste
- 1 tablespoon castor sugar
- 2 tablespoons fresh coriander leaves
Method
- Heat 2-3 tablespoons oil in a non-stick pan, place the tofu pieces in it and cook on high heat for 1-2 minutes. Flip the tofu pieces and cook the other side for 1-2 minutes as well. Take the pan off the heat.
- Heat 1-2 tablespoons oil in another non-stick shallow pan, add ginger, garlic and fresh red chillies, mix and sauté for 1-2 minutes.
- Add lemongrass and onion, mix and sauté for 1 minute. Add tofu and mix till well combined.
- Add soy sauce and mix well. Add salt and sugar, mix and cook for a few seconds.
- Add coriander leaves and mix. Transfer into a serving plate and serve hot.
