Ingredients
- 300 grams raw jackfruit, peeled, cut into small cubes, boiled and drained
- 3 toasted slider buns
- 1 tablespoon oil
- 1 teaspoon chopped ginger
- 1½ teaspoons chopped garlic
- 2 green chillies, chopped
- 1 medium onion, chopped
- ¾ cup tomato puree
- Salt to taste
- ¼ teaspoon dried mixed herbs
- Black pepper powder to taste
- ¼ teaspoon red chilli powder
- ¼ teaspoon smoked paprika powder
- 1 teaspoon Worcestershire sauce
- 2 teaspoons brown sugar
- 1 small carrot, peeled and thinly sliced
- 1 onion, thinly sliced
- ½ cup shredded purple cabbage
- 2 tablespoons mayonnaise + to drizzle
- Assorted lettuce leaves as required
Method
- Heat oil in a non-stick pan, add ginger, garlic and green chillies, mix and sauté for a few seconds.
- Add onion, mix and sauté till translucent.
- Add tomato puree, salt, dried mixed herbs, black pepper powder, red chilli powder and smoked paprika powder and mix well. Saute on medium heat for 4-5 minutes or till oil separates.
- Add Worcestershire sauce and brown sugar and mix well. Add jackfruit pieces and mix well. Cook on medium heat for 2-3 minutes.
- Add parsley and mix well.
- To make salad, take carrot in a bowl, add onion, purple cabbage, salt, black pepper powder and mayonnaise and mix well.
- Place the lower halves of the slider buns on the worktop and spread some mayonnaise on them.
- Arrange some lettuce leaves on top. Place a spoonful of jackfruit mixture on each half.
- Top up with salad and cover with the remaining halves.
- Arrange the sliders on a serving platter and serve with potato chips.
