Ingredients
- 250 grams shrimps, cleaned, peeled and deveined
- 4 burger buns, halved
- Salt to taste
- Crushed black peppercorns to taste
- 2 tablespoons chopped spring onion greens
- 1 teaspoon light soy sauce
- 2 spring onion bulbs, chopped
- 1 tablespoon refined flour (maida)
- 2 eggs, beaten
- Panko breadcrumbs for coating
- Oil for shallow frying
- Butter for applying
- Lettuce leaves as required
- Tartar sauce as required
- 4 cheese slices
- 1 medium tomato, cut into thin roundels
- Assorted chips to serve
Method
- Put the shrimps in a food processor jar, add salt, crushed black peppercorns and spring onion greens and process to a coarse mixture.
- Transfer the mixture into a large bowl, add light soy sauce, spring onion bulbs and refined flour and mix well till combined.
- Dip your palm in water and divide the mixture into equal portions and shape each portion it into a patty.
- Take beaten eggs in a bowl and spread panko breadcrumbs on a plate. Dip each patty in the eggs and coat with panko breadcrumbs on both sides and keep them on a plate.
- Heat a non-stick pan, toast the burger buns till golden brown and lightly crisp. Flip them and toast the other side for 30 seconds. Transfer on a worktop.
- Heat sufficient oil in the same pan, place the patties, one at a time, and shallow fry, turning sides, till golden brown and crisp on both sides. Drain on absorbent paper.
- To make each burger, apply some butter on the base half of each burger bun, place a few lettuce leaves on it, spread some tartar sauce over it, place a fried patty, top it up with a cheese slice, place 2 tomato roundels, sprinkle some salt and crushed black peppercorns over them. Apply some butter on the top half of each burger bun half. Place them over the tomato slices of each burger with the butter side facing down. Arrange each burger on individual serving plate and serve with assorted chips.
