Ingredients
· 300 grams boneless chicken leg, cut into 1 inch pieces
· 2 tsps ginger paste
· 1 tbsp garlic paste
· 1 tbsp light soy sauce
· 1 tbsp blended sesame oil
· Salt to taste
· Black pepper powder to taste
· ¾ cup potato starch
· ¾ cup refined flour
· 2 eggs
· Oil for deep frying
· Lemon wedges to serve
· Fresh parsley sprigs for garnish
· Mustard mayonnaise to serve
Method
1. Take chicken in a bowl, add ginger paste, garlic paste, light soy sauce, blended sesame oil, salt and black pepper powder and mix well.
2. Take potato starch in a bowl. Add salt and mix.
3. Take refined flour in another plate, add salt, black pepper powder and mix well.
4. Break eggs into a bowl. Add salt and black pepper powder and whisk well.
5. Heat sufficient oil in a kadai.
6. Roll the chicken pieces in refined flour mixture, dip in egg mixture and finally roll in potato starch mixture.
7. Slide these coated chicken pieces into hot oil and deep-fry on medium heat till golden brown and crisp. Drain on absorbent paper.
8. Arrange the on a serving platter, garnish with parsley sprigs and serve hot with lemon wedges and mustard mayonnaise.
