Ingredients

  • 4 cups sugarcane juice
  • ½ cup short grain rice, soaked for 30 minutes and drained
  • 2 tablespoons raisins
  • ½ teaspoon green cardamom powder
  • A pinch of saffron
  • 2-3 tablespoons chopped cashewnuts
  • 2-3 tablespoons slivered almonds + for garnish
  • 2 tablespoons ghee

Method

  1. Heat a non-stick pan, add sugarcane juice and bring it to a boil. Discard the impurities.
  2. Add rice, raisins, green cardamom powder and saffron, mix well and cook for 10-15 minutes or till the rice is completely cooked.
  3. Add cashewnuts, almonds and ghee and mix well.
  4. Transfer into serving bowls, garnish with slivered almonds and serve hot.
