Ingredients

  • 1 cup chopped spring onion bulbs
  • 3 cups chopped spring onion greens
  • 2 cups whole wheat flour + for dusting
  • 4 teaspoons chopped ginger
  • 6 green chillies, chopped
  • 4 tablespoons chopped garlic
  • Salt to taste
  • 4 tablespoons oil
  • Ghee for cooking
  • Pickle for serving
  • Yogurt for serving

Method

  1. Take spring onion bulbs and greens in a bowl, add ginger, green chillies, garlic and salt and mix well. Add whole wheat flour and oil and mix well. Further knead into a stiff dough. Cover with a moist muslin cloth and set aside for 10-15 minutes.
  2. Divide the dough into 8 equal portions and roll into balls. Dust some whole wheat flour on the worktop and roll out the dough portions into thick discs.
  3. Heat a non-stick tawa, place the prepared paranthas, one at a time, and cook on medium heat for 2-3 minutes.
  4. Flip and drizzle some ghee and continue to cook for 2-3 minutes more. Drizzle some more ghee and cook on high heat till golden brown specs appear on both the sides and the paranthas are crisp.
  5. Serve hot with pickle and yogurt.
