Ingredients
- 1 cup chopped spring onion bulbs
- 3 cups chopped spring onion greens
- 2 cups whole wheat flour + for dusting
- 4 teaspoons chopped ginger
- 6 green chillies, chopped
- 4 tablespoons chopped garlic
- Salt to taste
- 4 tablespoons oil
- Ghee for cooking
- Pickle for serving
- Yogurt for serving
Method
- Take spring onion bulbs and greens in a bowl, add ginger, green chillies, garlic and salt and mix well. Add whole wheat flour and oil and mix well. Further knead into a stiff dough. Cover with a moist muslin cloth and set aside for 10-15 minutes.
- Divide the dough into 8 equal portions and roll into balls. Dust some whole wheat flour on the worktop and roll out the dough portions into thick discs.
- Heat a non-stick tawa, place the prepared paranthas, one at a time, and cook on medium heat for 2-3 minutes.
- Flip and drizzle some ghee and continue to cook for 2-3 minutes more. Drizzle some more ghee and cook on high heat till golden brown specs appear on both the sides and the paranthas are crisp.
- Serve hot with pickle and yogurt.
