Ingredients
- 1½ cups macaroni
- 1½ cups tomato concasse
- 3 cups vegetable stock
- ½ medium zucchini, roughly chopped
- 5-6 button mushrooms, quartered
- ½ cup corn kernels
- 1 small carrot, peeled and cut into triangles
- 6-8 broccoli florets
- Salt to taste
- 1 teaspoon sugar
- ½ teaspoon red chilli flakes
- ½ teaspoon dried mixed herbs
- ¼ cup grated parmesan cheese
- 1 tablespoon extra virgin olive oil
- Fresh basil sprig for garnish
Method
- Heat a non-stick pan, add tomato concasse, vegetable stock, zucchini, button mushrooms, corn, carrot, broccoli florets, salt, sugar, red chilli flakes, dried mixed herbs, parmesan cheese and macaroni and mix well. Add olive oil and mix well. Cover and cook on medium heat for 10-15 minutes.
- Transfer into a serving bowl, garnish with basil sprig and serve hot.
