Ingredients
- 2 cups gram flour (besan)
- 2 tablespoons + ½ cup ghee + for greasing
- 4 tablespoons milk
- 1 cup sugar
- ¼ teaspoon green cardamom powder
- ¼ teaspoon nutmeg powder
- 8-10 almonds, sliced
- 8-10 pistachios, sliced
Method
- Sift gram flour through a fine sieve into a parat and discard the residue.
- Heat 2 tablespoons ghee and milk in a non-stick pan till the mixture begins to boil. Pour both over the gram flour.
- Mix with a spatula till you can mix with fingers thoroughly so that no lumps are formed and it resembles breadcrumbs. Pass it through a sieve again and set aside.
- Grease a burfi tray with some ghee.
- Heat a deep non-stick pan. Add sugar and ¾ cup water and cook on medium heat till the syrup reaches slightly more than 1 string consistency.
- Heat ½ cup ghee in a non-stick kadai. Add the prepared gram flour mixture and cook, stirring continuously, on low heat, for 15-20 minutes or till fragrant and the flour turns golden brown.
- Add cardamom powder and nutmeg powder. Remove from heat and add the hot sugar syrup when the besan mixture is still hot. Mix continuously to ensure that no lumps are formed. Continue to mix till it reaches setting consistency.
- Pour onto greased burfi tray, spread it evenly and level the top. Garnish with almonds and pistachios and press gently. Let it cool and set.
- Cut into squares, arrange them on a serving plate and serve.
