Ingredients
- 2 ready-made tortillas
- 1 medium avocado
- 1 cup boiled kidney beans (rajma)
- ¼ cup boiled sweet corn kernels
- 1 small green capsicum, finely chopped
- 1 small red capsicum, finely chopped
- 1 small potato, boiled, peeled, and cut into ½ inch cubes
- 1 small onion, finely chopped + for sprinkling
- ½ lemon
- 2 tablespoons sour cream + for drizzling
- 2 tablespoons pizza sauce
- 1 teaspoon chopped fresh coriander leaves + for sprinkling
- 1½ teaspoon red chilli powder
- 1 teaspoon roasted cumin powder
- 1 teaspoon chaat masala
- Salt to taste
- Oil to deep fry
- ½ teaspoon dried mango powder
- ½ teaspoon chaat masala
- ½ teaspoon black salt
- Finely chopped raw mango for sprinkling
- Fresh pomegranate pearls for sprinkling
- Roasted unsalted peanuts for sprinkling
- 1 fresh green jalapeno, thinly sliced
- 1 fresh red jalapeno, thinly sliced
- Bhujiya for garnish
Method
- Vertically halve the avocado, remove the seed, cut the flesh into small cubes and scoop them out into a large bowl.
- Add kidney beans, sweet corn kernels, green capsicum, red capsicum, potato, onion, squeeze the juice of lemon, sour cream and pizza sauce and mix well.
- Add coriander leaves, red chilli powder, roasted cumin powder, chaat masala and salt and mix till well combined.
- Cut each tortillas into 8 equal triangles.
- Heat sufficient oil in a kadai. Gently slide in the tortilla triangles and deep-fry till golden brown and crisp. Drain on absorbent paper.
- Transfer the tortilla triangles into a bowl, add remaining red chilli powder, dried mango powder, remaining chaat masala, black salt, remaining roasted cumin powder and salt and gently toss till each crisp tortilla triangle is covered with the masala. These are the papdis.
- Arrange the papdis on a serving plate, spread some of the avocado mixture on top, sprinkle onion, raw mango, fresh pomegranate pearls, roasted peanuts, drizzle sour cream, sprinkle coriander leaves, fresh green jalapeno and fresh red jalapeno slices and h bhujia. Serve immediately.
