Ingredients
- 4 medium tomatoes, quartered
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 2 bay leaves
- 6-8 dried red chillies
- 1 tablespoon raisins
- Salt to taste
- ½ cup chopped jaggery
Method
- Heat oil in an earthen pot, add cumin seeds and let them change colour. Add bay leaves and dried red chillies, mix and sauté for 30 seconds.
- Add tomatoes, raisins and salt, mix well, cover and cook for 5-6 minutes or till the tomatoes turn soft and pulpy.
- Add jaggery, mix, cover and cook for 5-6 minutes. Switch the heat off and allow the mixture to cool completely. Discard the bay leaves and dried red chillies.
- Transfer the mixture into a serving bowl and serve warm.
