Quinoa Stuffed Tomatoes

Ingredients

  • 8 medium firm red tomatoes
  • 1 cup quinoa
  • Salt to taste
  • ¼ tsp crushed black peppercorns
  • 1 tbsp raisins
  • 1 cup chopped spring onions
  • 3-4 sprigs curly parsley
  • Juice of ⅔ lemon

Method

  1. Preheat oven to 180° C.
  2. Heat 2 cups of water in a non-stick pan, add quinoa, salt, crushed black peppercorns and raisins. Cover and cook for 5 minutes or till half done.
  3. Cut a thin slice from top of the tomatoes and scoop out the pulp. Place them in a baking dish.
  4. Place spring onions in a bowl. Chop parsley and add. Drain the quinoa and add to the bowl.
  5. Add a little salt and lemon juice and mix well.
  6. Stuff this mixture into the tomatoes and arrange them in a single file in the baking dish.
  7. Keep the dish in the preheated oven and bake for 30 minutes.
  8. Serve hot.
