Ingredient
- 1 tablespoon green matcha powder
- ⅓ cup chopped white chocolate
- ⅓ cup butter
- 1 cup refined flour (maida)
- ¼ teaspoon salt
- ¼ teaspoon baking soda
- 3 tablespoons brown sugar
- 2 tablespoons castor sugar
- ½ teaspoon vanilla essence
- 1 egg
- 1 egg yolk
Method
- Preheat the oven at 180° C.
- To make brown butter, heat butter in a non-stick pan till it melts and turns golden. Take the pan off the heat and allow the melted butter to cool down to room temperature.
- Sift refined flour into a large bowl. Add matcha powder, salt and baking soda and mix well.
- Transfer brown butter into a large bowl, add brown sugar, castor sugar and vanilla essence. Break egg and add it along with an egg yolk and whisk till the sugar melts and mixture turns light and fluffy.
- Add flour mixture, little by little, and fold in gently till well combined. Add white chocolate and mix with light hands till a dough is formed.
- Take small portions of the dough and shape each portion into a ball. Press it lightly and make a small cavity in the centre. Arrange on a lined baking tray, keep the tray in the preheated oven and bake for 12-15 minutes.
- Bring the tray out of the oven and allow the cookies to cool slightly.
- Arrange the cookies on a serving plate and serve.
