  • 6 Peaches tinned
  • 100 grams White chocolate chopped
  • 3 Eggs
  • 1/2 cup Sugar
  • 1 teaspoon Vanilla essence
  • 100 grams Butter
  • 1 1/2 cups Refined flour (maida)
  • 1 teaspoon Refined flour (maida)
  • 1/2 teaspoon Baking soda
  • 1/2 cup Buttermilk
  • Sugar syrup

Method

  1. Preheat oven to 180°C.
  2. Break eggs into a large bowl and whisk them with a hand blender. Add sugar and blend till light and fluffy. Add vanilla essence and blend again.
  3. Halve each peach and cut each half into 3-4 vertical slices. Melt butter in the microwave oven for 15 seconds.
  4. Sieve refined flour, baking powder and baking soda into the egg mixture and mix with a light hand. Add buttermilk and mix lightly. Add melted butter and white chocolate and mix well.
  5. Grease a glass oval dish. Pour the batter into it. arrange the peach slices in a decorate manner on top to cover the batter completely.
  6. Bake in the preheated oven for 40-45 minutes. Take it out of the oven, pour the sugar syrup from the tinned peaches on top and serve.
