Ingredients
- 12 phyllo sheets
- 2 medium apples
- ½ lemon
- ¼ cup roasted and crushed walnuts
- ¼ cup raisins
- 6 tablespoons castor sugar
- ¼ teaspoon cinnamon powder
- Butter for greasing + as required
- 2 eggs
- 2 tablespoons corn flour
- ¾ cup milk
- ¼ teaspoon vanilla essenc
- Toffee sauce to drizzle
- Vanilla ice cream to serve
Method
- Preheat oven to 180ºC.
- Core the apples, peel and chop them. Transfer into a bowl and squeeze juice of lemon. Add walnuts, raisins, 3 tablespoons castor sugar and cinnamon powder and mix well.
- Line a baking tray with parchment paper grease with butter.
- Place 2 phyllo sheets on worktop and apply butter evenly. Top up with 2 more phyllo sheets and apply some more butter on top.
- Spread a portion of apple stuffing, gather the edges so as to create pleats. Make more such pies with the remaining phyllo sheets and apple stuffing. Place these in the tray.
- Place the tray in preheated oven and bake for 15 minutes.
- For the custard, break eggs into a bowl. Add remaining castor sugar, corn flour and mix well. Add milk and mix. And vanilla essence and mix well.
- Strain the custard directly over the baked pies and bake for another 20 minutes.
- Cut into pieces, drizzle toffee sauce and serve with vanilla ice cream.
