Ingredients
- 2 medium ripe mangoes, peeled and cut into ½ inch cubes
- 100 grams emmental cheese block
- 100 grams mozzarella cheese block
- 8 sour dough bread slices
- 4 tablespoons + 1 teaspoon butter
- 1 teaspoon oil
- 1 teaspoon ginger, finely chopped
- 1 teaspoon garlic, finely chopped
- 1 small onion, finely chopped
- ½ teaspoon salt
- ¾ cup sugar
- ¼ teaspoon black pepper powder
- 1 teaspoon lemon juice
- 2-3 tablespoons cream cheese
- 2 tablespoons sliced pickled red jalapenos
- Salad to serve
Method
- To make the mango jam, heat 1 teaspoon butter and 1 teaspoon oil in a non-stick pan, add ginger, garlic and onion, mix and sauté till translucent.
- Add mangoes, mix and sauté for 2 minutes. Add salt and sugar, mix well and cook till the sugar melts. Further cook till the mixture thickens.
- Add black pepper powder and lemon juice and mix well. Switch the heat off and set aside till the mixture cools completely.
- Thinly slice emmental cheese and mozzarella cheese.
- To make one sandwich, heat 1 tablespoon butter in another non-stick pan. Place two sour dough bread slices and cook till the underside is golden brown. Flip them, reduce the heat to low, spread a portion of cream cheese evenly on one side of both the bread slices.
- Spread a portion of the mango jam over each slice. Place a few Emmental cheese slices, mozzarella cheese slices and some pickled red jalapenos slices over one bread slice. Cover it with the second bread slice with the jam side facing down. Apply some butter and continue to cook, turning sides, till the cheese melts and the bread turns golden. Cook more sandwiches similarly.
- Cut each sandwich into half and arrange on a serving plate. Serve with salad.
