Ingredients
- 1 sourdough bread
- Garlic oil for brushing and greasing
- 4-5 fresh basil sprigs
- 8-10 bocconcini (fresh mozzarella)
- 8-10 red cherry tomatoes, halved
- 6-8 yellow cherry tomatoes, halved
- Salt to taste
- Crushed black peppercorns to taste
Method
- Cut the sourdough bread into slices. Brush with garlic oil.
- Rough chop basil sprigs. Halve bocconcini.
- Preheat oven to 180º C. Grease a baking tray with some oil.
- Heat a non-stick grill pan. Place the bread sliced on it and grill till grill marks appear on both sides.
- Place the grilled bread slices on the greased tray, top with red and yellow cherry tomatoes, bocconcini halves and some chopped basil, reserving some for garnishing.
- Sprinkle salt and crushed peppercorns.
- Put the tray in the preheated oven and bake till the cheese melts.
- Garnish with reserved basil and serve hot.
