Ingredients

  1. Roughly chop Pro V Select Zahidi Whole Natural Dates and Pro V Premium Figs.
  2. Transfer into a food processor, add 1 tablespoon hot water and process to a coarse mixture.
  3. Heat 2 teaspoons ghee in a non-stick pan, add ground mixture and green cardamom powder and mix well. Add vanilla essence, mix and cook on medium heat for 3-4 minutes.
  4. Take the pan off the heat and allow to cool.
  5. Sift refined flour, salt and baking powder into a bowl. Add remaining ghee and mix well. Add ⅛ cup water knead to stiff dough. Cover with a moist muslin cloth and set aside for 10-15 minutes.
  6. Heat sufficient oil in a kadai.
  7. Divide the dough into 8 equal portions and roll into balls. Divide the dates mixture into 8 equal portions and roll into balls. Make cavity in the centre of each dough ball and stuff with a stuffing ball. Gather the edges and seal properly. Flatten slightly. Roll into thick disc.
  8. Gently slide in the discs into hot oil and deep-fry till golden brown.
  9. Drain on absorbent paper allow to cool. Arrange in a serving bowl and serve.
