Ingredients
- 1 medium bunch green garlic with greens
 - 5 eggs
 - 1 small bunch fresh coriander leaves
 - 10-15 fresh mint leaves
 - 1 medium onion, roughly chopped
 - 2-3 green chillies
 - 1 inch ginger, sliced
 - 2 tablespoons oil
 - 1 teaspoon cumin seeds
 - 2 spring onion bulbs, finely chopped
 - ¼ teaspoon turmeric powder
 - Salt to taste
 - 1 teaspoon coriander powder
 - ½ teaspoon cumin powder
 - ½ lemon
 - 2 tablespoons chopped spring onion greens + for sprinkling
 - Red chilli flakes for sprinkling
 - Crushed black peppercorns for sprinkling
 - Toasted bread slices to serve
 
Method
- Finely chop green garlic with the greens.
 - Put coriander leaves in a blender jar, add mint leaves, onion, green chillies and ginger and blend to a fine paste.
 - Heat oil in a wide pan, add cumin seeds and let them change colour. Add spring onion bulbs, mix and sauté for 1-2 minutes.
 - Add chopped green garlic with the greens, mix and sauté for 1-2 minutes. Add half the blended paste and mix well.
 - Add turmeric powder, salt, coriander powder and cumin powder and mix well.
 - Add the remaining blended paste and mix well. Rinse the blender jar with 1 cup water and add it into the pan. Mix well and cook for 1-2 minutes.
 - Squeeze the juice of lemon and spring onion greens and mix well. Make 5 cavities at equidistance in the mixture.
 - Break 1 egg into each cavity. Cover and cook on medium heat for 3-4 minutes. 
Sprinkle red chilli flakes, crushed black peppercorns and spring onion greens over the eggs. - Serve hot with toasted bread slices.
