Ingredients
- Brownie
- ½ cup butter
- 1 cup chopped dark chocolate
- ¼ cup yogurt
- ¾ cup castor sugar
- 1 cup refined flour
- 1 teaspoon baking powder
- A large pinch of salt
- 2 tablespoons coffee decoction (2 teaspoons coffee powder mixed with 2 tablespoons
- warm water)
- ¼ cup milk
- 1 teaspoon vanilla essence
- Cookies
- ½ cup butter
- ½ cup castor sugar
- 1¼ cups refined flour
- ¼ teaspoon baking soda
- ¼ teaspoon baking powder
- Small pinch of salt
- ⅓ cup chocolate chips + for sprinkling
- ¼ cup milk
- 1 teaspoon vanilla essence
Method
- Preheat oven to 180º C.
- To make the brownie mixture, take butter and dark chocolate in a microwave bowl, keep it the microwave oven and cook till the mixture melts.
- Take yogurt in a large bowl, add castor sugar and mix well.
- Add the chocolate-butter mixture and mix till well combined. Sift refined flour, baking powder and salt directly into the mixture. Add coffee decoction, milk and vanilla essence. Gently fold in till well combined.
- For the cookie dough, take butter in another large bowl. Add castor sugar and beat with an electric beater till the mixture becomes light and fluffy.
- Sift refined flour, baking soda, baking powder and salt directly into the bowl. Add chocolate chips, milk and vanilla essence and mix till well combined.
- Transfer the brownie mixture into a greased and lined square baking tin and spread evenly.
- Take small portions of the cookie dough and place them randomly over the brownie mixture. Sprinkle some chocolate chips. Place this in the preheated oven and bake for 30-35 minutes.
- Remove the baking tin out of the oven and let it cool completely. Demould and cut into squares. Arrange on serving plate and serve.
