Ingredients
- 600 grams boneless chicken thigh, cut into 1 inch pieces
- ¼ cup hoisin sauce
- 1 tablespoon soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon white vinegar
- 1 tablespoon finely chopped garlic
- 2 tablespoons + ¼ cup corn flour
- 1 teaspoon red chilli flakes
- Salt to taste
- Crushed black peppercorns to taste
- 3 tablespoons sesame oil
- 1 tablespoon finely chopped ginger
- 2 spring onion bulbs, finely chopped
- 1 small yellow capsicum, cut into 1 inch pieces
- 3 tablespoons chopped spring onion greens + for garnish
- Toasted white sesame seeds for garnish
Method
- To make hoisin mixture, take hoisin sauce in a bowl, add soy sauce, brown sugar, white vinegar and garlic and mix well. Add 2 tablespoons corn flour red chilli flakes, salt and crushed black peppercorns and mix well.
- Take chicken in another bowl. Add salt, crushed black peppercorns, 1 tablespoon sesame oil and ¼ cup corn flour and mix well.
- Heat 2 tablespoons sesame oil in a non-stick wok. Add the chicken pieces and sauté on high heat, turning sides, for 3-4 minutes. Drain the chicken pieces on absorbent paper.
- Heat the oil remaining in the pan, add ginger and sauté for 1 minute. Add spring onion bulbs and mix well and saute for 1-2 minute. Add the hoisin mixture and mix and cook for 1 minute. Add ½ cup water and mix well and cook for 1-2 minutes.
- Add the chicken pieces and mix till all the pieces are well coated with the sauce and continue to cook for 4-5 minutes.
- Add yellow capsicum and spring onion greens, mix gently and sauté for a few seconds.
- Transfer into a serving bowl and serve hot garnished with spring onion greens and toasted white sesame seeds.
