Ingredients
- 1 cup refined flour (maida)
- 2 tablespoons semolina
- 1½ tablespoons + ¾ cup sugar
- 1 teaspoon coarsely crushed fennel seeds
- ¼ teaspoon green cardamom powder
- ¼ cup full fat milk
- 2 tablespoons grated dried coconut
- Ghee for shallow frying
- Slivered almonds for garnish
- Blanched and slivered pistachios for garnish
Method
- Take refined flour in a bowl, add semolina, 1½ tablespoons sugar, fennel seeds, green cardamom powder and milk and mix well.
- Add ¾ cup water and mix well. Add dried coconut and mix. Set aside for 30 minutes.
- For syrup, heat a non-stick pan, add sugar and ½ cup water and mix well. Cook till the syrup reaches 1 string consistency. Set aside.
- Heat sufficient ghee in wide shallow pan. Pour small ladles full of batter keeping some distance from each and shallow fry, on both sides, till evenly golden brown and crisp.
- Drain and soak in warm sugar syrup for 15-20 minutes.
- Drain and transfer onto a serving plate, sprinkle almonds, pistachios and serve.
