Apple Cinnamon Bread

 Ingredients

  • 1 medium red apple
  • ½ teaspoon cinnamon powder
  • 1½ teaspoons instant dry yeast
  • ¼ cup castor sugar
  • 2 cups refined flour (maida) + for dusting
  • 1 teaspoon salt
  • ¼ cup melted butter + for brushing
  • 2 tablespoons chopped walnuts
  • 1½ cups milk + for brushing
  • Butter mixture
  • ⅓ cup soft butter
  • 2 tablespoons castor sugar
  • 2 tablespoons brown sugar + for sprinkling
  • ¼ teaspoon nutmeg powder
  • 1 teaspoon cinnamon powder

Method

  1. Peel and core the apple, cut it into small pieces, transfer into a blender jar and blend to a fine puree.
  2. Transfer the puree into a bowl, add instant dry yeast and castor sugar and mix well.
  3. Sift refined flour, salt and cinnamon powder into a large bowl. Add melted butter and apple mixture and walnuts and mix well. Add milk and knead into a soft dough. Transfer the dough into another bowl, brush some melted butter over it, cover with a damp muslin cloth and set aside to prove for 1 hour.
  4. To make butter mixture, take butter in a small bowl, add castor sugar, brown sugar, nutmeg powder and cinnamon powder and mix well. 
  5. Knock back the dough. Dust the worktop with some flour, place the dough on it and roll it into a large sheet of medium thickness. Apply the butter mixture evenly over the sheet and roll tightly into a log. Pinch the edges to seal. Transfer into a greased bread loaf tin. Cover with a damp muslin cloth and set aside to prove for ½ hour. 
  6. Preheat the oven to 200⁰ C.
  7. Brush some milk over the log. Sprinkle brown sugar and place it in the preheated oven and bake for 25-30 minutes.
  8. Bring the bread out of the oven and brush some melted butter. De-mould the bread and allow to cool completely. Cut into slices, place on a serving platter and serve.
