Ingredients
- 750 grams mutton, cut into 2 inch pieces on the bone
- 4 tablespoons oil
- 10-12 garlic cloves
- 1 inch ginger piece, roughly chopped
- 3-4 green chillies
- 1 cup grated dried coconut
- 1 cup fresh coriander leaves
- 8-10 black peppercorns
- 3-4 green cardamoms
- 1 black cardamom
- 1 inch cinnamon
- 2 bay leaves
- 3 medium onions, sliced
- Salt to taste
- 2 medium tomatoes, chopped
- 1 teaspoon turmeric powder
- 1½ tablespoons agri koli masala
- 2 medium potatoes, quartered without peeling
- 2-3 tablespoons chopped fresh coriander leaves
- ½ lemon
- Fresh coriander sprig for garnish
- Bhakri for serving
Method
- Heat 2 tablespoons oil in a pan, add garlic, ginger and green chillies, mix and sauté for 30 seconds.
- Add dried coconut, mix and sauté till golden brown. Add coriander leaves, mix and sauté for 2 minutes. Allow to cool slightly.
- Transfer into a blender jar, add 1 cup water and grind to fine paste.
- Heat remaining oil in the same pan, add black peppercorns, green cardamoms, black cardamom, cinnamon and bay leaves and sauté till fragrant.
- Add onions and salt, mix and sauté till the onions turn golden brown.
- Add tomatoes and sauté for 2 minutes on medium heat.
- Add mutton, mix and sear on high heat for 2-3 minutes.
- Add turmeric powder and agri koli masala and mix well.
- Add potatoes and mix well. Add 1 cup water and mix well.
- Add the ground paste and mix well. Rinse the blender jar with 1½ cups water and add. Mix well, cover and cook on medium heat for 25-30 minutes.
- Add coriander leaves. Squeeze the juice of ½ lemon and mix well.
- Transfer into a serving bowl, garnish with coriander sprig and serve hot with bhakri.
