Ingredients list for Wadi Vegetable Pulao
- 5 Spicy urad dal wadis
- 3-4 French beans cut into diagonals
- 1/4 Medium cauliflower separated into florets
- 1/2 Medium carrot peeled and cut into 1/2 inch cubes
- 2 tablespoons Green peas
- 1 1/2 cups Basmati rice soaked for 30 minutes and drained
- 2 tablespoons Oil
- 2 tablespoons Ghee
- 6-7 Cloves
- 5-6 Black peppercorns
- 1 1/2 inches Cinnamon
- 2 Bay leaves
- 1 Medium onion finely chopped
- 1 teaspoon Ginger-green chilli paste
- 1 Medium tomato finely chopped
- 1/2 teaspoon Turmeric powder
- to taste Salt
- to garnish Fresh coriander leaves chopped
Method
- Heat oil in a non-stick pan, add wadis and sauté on medium heat till golden brown. Drain and soak in warm water.
- Heat ghee in a deep non-stick pan, add cloves, black peppercorns, cinnamon and bay leaves and onion, mix and sauté till onion turns golden.
- Add ginger-green chilli paste, mix well and saute for 1 minute on medium heat.
- Add tomato, mix and sauté till tomato turns pulpy. Add French beans, cauliflower florets and carrot, mix well and saute for 2-3 minutes.
- Add rice and mix well. Add turmeric powder and salt and mix well. Break and add wadis and mix well. Add 3 cups water and green peas. Cover and cook on medium heat for 10-12 minutes or till the rice is cooked.
- Transfer into a serving plate, garnish with coriander leaves and serve hot.
