Ingredients list for Wadi Vegetable Pulao

  • 5 Spicy urad dal wadis
  • 3-4 French beans cut into diagonals
  • 1/4 Medium cauliflower separated into florets
  • 1/2 Medium carrot peeled and cut into 1/2 inch cubes
  • 2 tablespoons Green peas
  • 1 1/2 cups Basmati rice soaked for 30 minutes and drained
  • 2 tablespoons Oil
  • 2 tablespoons Ghee
  • 6-7 Cloves
  • 5-6 Black peppercorns
  • 1 1/2 inches Cinnamon
  • 2 Bay leaves
  • 1 Medium onion finely chopped
  • 1 teaspoon Ginger-green chilli paste
  • 1 Medium tomato finely chopped
  • 1/2 teaspoon Turmeric powder
  • to taste Salt
  • to garnish Fresh coriander leaves chopped

Method

  1. Heat oil in a non-stick pan, add wadis and sauté on medium heat till golden brown. Drain and soak in warm water.
  2. Heat ghee in a deep non-stick pan, add cloves, black peppercorns, cinnamon and bay leaves and onion, mix and sauté till onion turns golden.
  3. Add ginger-green chilli paste, mix well and saute for 1 minute on medium heat.
  4. Add tomato, mix and sauté till tomato turns pulpy. Add French beans, cauliflower florets and carrot, mix well and saute for 2-3 minutes.
  5. Add rice and mix well. Add turmeric powder and salt and mix well. Break and add wadis and mix well. Add 3 cups water and green peas. Cover and cook on medium heat for 10-12 minutes or till the rice is cooked.
  6. Transfer into a serving plate, garnish with coriander leaves and serve hot.
