Ingredients list for Vegetable Parcels

  • 1/4 cup Broccoli chopped
  • 4-6 Button Mushrooms quartered
  • 1 Green capsicum small pieces, triangle shaped
  • 1/4 cup Corn niblets
  • 2 medium Carrots sliced
  • 7-8 Babycorns chopped
  • 1 inch piece Ginger chopped
  • 5-6 cloves Garlic chopped
  • 3-4 Spring onions with greens
  • 2 Green chillies
  • 7-8 Peppercorns crushed
  • 1/2 teaspoon Red chilli flakes
  • to taste Salt
  • 1/2 teaspoon Brown sugar
  • 2 teaspoons Lemon juice
  • a few sprigs Rosemary chopped
  • 8-10 Fresh basil leaves torn
  • 3-4 Spring onion bulb quartered

Method

  1. Mix together broccoli, mushrooms, capsicum, corn niblets, carrots, babycorn, ginger, garlic, chopped spring onion, green chillies, peppercorns, red chilli flakes and salt to taste in a large bowl.
  2. Add brown sugar, lemon juice, rosemary, basil, quartered spring onions and toss well.
  3. Tear aluminium foil into large squares. Place portions of mixed vegetables in the centre, fold loosely so as to leave some air pocket in the parcel. Seal well.
  4. The steam should not escape. Heat a tawa and place aluminium parcels on it.
  5. Cook for ten minutes. Alternatively place in a hot oven at 180C and bake for ten minutes.
  6. Just before serving open parcels carefully, there will be some moisture, which is desirable.
