Ingredients
- 4 medium potatoes, boiled and peeled
- 6-8 curry leaves
- 2-3 green chillies
- 1 inch ginger piece
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon split black gram skinless (dhuli urad dal)
- A pinch of asafoetida
- 1-2 dried red chillies, broken
- 1 teaspoon lemon juice
- Salt to taste
- 2 tablespoons chopped fresh coriander leaves
- 4-6 tablespoons oil
- 2 tablespoons scraped fresh coconut
Method
- Heat oil in a non stick pan. Finely chop green chillies and ginger. Add mustard seeds to the oil.
- When they splutter, add dhuli urad dal, asafoetida and red chillies and saute.
- Add ginger and green chillies and saute.
- Mash potatoes and add to the pan and mix well. Add 3-4 tbsps water and mix.
- Add lemon juice and mix. Add salt, coriander leaves, curry leaves and mix.
- Cook for some time. Add coconut and mix. Serve hot.
