Ingredients
- 3 medium ridge gourds (turai), peeled
- 3 medium tomatoes
- 2 tablespoons mustard oil
- 1/4 teaspoon asafoetida
- 1 teaspoon cumin seeds
- 1 teaspoon red chilli powder
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon garam masala powder
- Salt to taste
- 1 tablespoons tamarind pulp
- 1 tablespoon sugar
- 3-4 fresh coriander sprigs
- 2-3 tablespoons ganthia
Method
- Cut ridge gourds into small pieces.
- Heat mustard oil in a non-stick wok, add asafoetida and cumin seeds and saute for 1 minute.
- Add ridge gourds and mix. Saute for 1-2 minutes. Add red chilli powder, turmeric powder, garam masala powder and salt and mix well.
- Roughly chop tomatoes, grind them in a mixer and add to the wok. Mix well and cook for 6-8 minutes.
- Add tamarind pulp and sugar and mix well. Cook for 2 minutes.
- Chop coriander leaves and add to the wok and mix well.
- Transfer into a serving bowl and serve hot garnished with ganthia.
