Ingredients
- 250 grams ridge Gourd
- 2 medium potatoes, boiled and peeled
- 5 tablespoons pplit Bengal gram (chana dal), soaked
- Salt to taste
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 2 green chillies, broken
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- 1 medium tomato. chopped
- 1/4 teaspoon garam masala powder
- 1 teaspoon chopped fresh coriander leaves
Method
- Heat water in a deep non-stick pan. Drain and add chana dal and salt and cook till the dal is almost done. Scrape and wash turai. Chop into big pieces.
- Heat oil in a non-stick pan, add cumin seeds and turai and sauté for a minute. Add green chillies, turmeric powder, red chilli powder and mix well. Add salt and mix well. Cover and cook for 1-2 minutes.
- Add tomato and mix well.Strain the cooked chana dal and add to the pan. Mash the potatoes and add. Add salt if required, garam masala powder and coriander leaves and mix well. Add ½ cup water and mix well. Cover and cook for 3-4 minutes.
- Serve hot.
