Ingredients list for Toto Jamaican Coconut Cake
- ¾ cup Desiccated coconut
- for greasing Butter
- for dusting Refined flour (maida)
- 1½ cups Almond flour
- ½ teaspoon Baking powder
- ½ teaspoon Baking soda
- ½ teaspoon Nutmeg powder
- ½ teaspoon All spice powder
- ½ teaspoon Dried ginger powder (soonth)
- ¼ cup Coconut oil
- ¾ cup Palm sugar
- 4 Eggs
- 1 teaspoon Vanilla essence
Method
- Preheat oven to 180°C. Grease a cake tin with some butter and dust with some flour.
- Mix together desiccated coconut, almond flour, baking soda, baking powder, nutmeg powder, all-spice powder and ginger powder in a mixing bowl.
- Cream together coconut oil and palm sugar in another mixing bowl till creamy.
- Add eggs and vanilla essence and beat well. Add the flour mixture and mix well.
- Pour the batter into the prepared tin. Place the tin in the preheated oven and bake for 30-40 minutes. Remove from oven and cool.
- Slice and serve.
