Fundamentally an aromatic marriage of centuries – old Eastern and Western influences, the chief characteristics being who cooks it, for whom it is cooked, for what occasion and where it is cooked. In short Thai dishes can be extremely personal to the cook, how they are refined for particular tastes, how they befit a special function or festival and where they originate. The cuisine has its roots in a waterborne lifestyle, with aquatic animals, plants and herbs as major ingredients.
Thai cuisine is inextricably interwoven with culture, a mystical mix of fragrant flavours and intriguing history:  given the country’s historical Indian roots - Hindu Buddhism was bought here centuries ago, so many Thai curries are redolent with chillies, garlic, cardamom, cloves, cinnamon, and onions.

Ingredients for Thai Style Tamarind Prawns Recipe

  • Prawns shelled and deveined 20-25

  • Tamarind Pulp 1 tablespoon

  • Oil 2 tablespoons

  • Spring onions with greens 5-7

  • Dark soy sauce 2-3 teaspoons

  • Lemon 1

  • Onion finely chopped 1/2 medium

  • Ginger grated 1 tablespoon

  • Garlic crushed 1 tablespoon

  • Fresh red chillies 4-5 + for garnishing

  • Brown sugar 2 teaspoons

  • Salt to taste

  • Scraped fresh coconut 1 tablespoon

  • Fresh basil leaves 5-7

  • Fresh coriander leaves 4-5 sprigs + for garnishing

Method

Step 1

Heat 1 tbsp oil in a non-stick pan. Roughly chop spring onions with greens.

Step 2

Put prawns and dark soy sauce in a bowl and mix. Grate rind of half lemon into it and mix well.

Step 3

Add the prawns to the pan and sauté on high heat for 2-3 minutes. Transfer into another bowl.

Step 4

Place the same pan back on heat, add the remaining oil, onion, ginger and garlic and sauté till lightly browned.

Step 5

Roughly chop red chillies. Add tamarind pulp, brown sugar and salt to the pan and mix well.

Step 6

Add coconut and mix well. Add red chillies and mix well. Roughly tear basil leaves and add to the pan. Add spring onion with greens and mix well.

Step 7

Roughly chop coriander leaves and add to the pan. Add sautéed prawns and mix well. Cook till the prawns are done.

Step 8

Transfer the tamarind prawns onto a serving plate, garnish with fresh red chilli and coriander leaves and serve immediately.
