Ingredients list for Tariwala Chicken

  • 750 grams Chicken drumsticks and thighs cut into half
  • 2 tablespoons Oil
  • 1 Bay leaf
  • 2-3 Green cardamoms
  • 1 Black cardamom
  • 1 inch Cinnamon
  • 1 teaspoon Cumin seeds
  • 1 Large onion finely chopped
  • 2 tablespoons Ginger-garlic paste
  • 1 1/2 teaspoons Tata Sampann Red Chilli Powder
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1 tablespoon Fresh coriander leaves chopped
  • to taste Salt
  • 1-2 Green chillies chopped
  • 3 medium Medium tomatoes pureed
  • 1/4 teaspoon Green cardamom powder
  • for garnish Fried onions
  • to serve Steamed rice

Method

  1. Heat oil in a non-stick wok, add bay leaf, green cardamoms, black cardamom, cinnamon and cumin seeds and sauté till cumin changes colour and the mixture becomes fragrant. Add onion, mix and sauté till golden.
  2. Meanwhile, take chicken in a bowl, add 1 tbsp ginger-garlic paste, turmeric powder, red chilli powder, cumin powder, coriander powder, coriander powder and salt and mix well.
  3. Add remaining ginger-garlic paste and green chillies to the onion mixture, mix well and saute till the raw smell of the garlic disappears.
  4. Add tomato puree and mix well. Cover and cook, stirring occasionally, till oil separates.
  5. Add chicken, mix well and saute on high heat. Add green cardamom powder, mix well and sauté on high heat for 3-4 minutes.
  6. Add 2 cups hot water and mix well. Cover and cook till the chicken is cooked completely. Take the pan off the heat.
  7. Transfer into a serving bowl, garnish with fried onions and coriander leaves and serve hot with steamed rice or parantha or pav.
