Ingredients
Dhokla
- 2 cups gram flour (besan)
- ½ teaspoon turmeric powder
- Salt to taste
- ½ teaspoon ginger-green chilli paste
- 1 cup yogurt
- 1 tablespoon oil
- 1 teaspoon fruit salt
- Fresh coriander leaves chopped, for garnish
Tempering
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- 7-8 curry leaves
- 2 Tandoori masala powder
Method
- Take gram flour in a bowl, add turmeric powder, salt, ginger-green chilli paste, yogurt and sufficient water and mix well to make a smooth and semi-thick batter. Add oil and fruit salt and mix well.
- Heat sufficient water in a steamer and grease a thali with oil. Pour the batter into the thali and place it in the steamer. Cover and steam for 10-12 minutes. Take the thali out of the steamer and set aside to cool slightly. Cut into even-sized cubes.
- Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add 7-8 curry leaves, tandoori masala powder and dhokla cubes. Toss well and cook for 30 seconds.
- Transfer the dhokla cubes onto a serving platter, garnish with coriander and serve hot.
