Ingredients
- 8 large tomatoes
- 1 large onion
- 5 garlic cloves
- 1 inch ginger piece
- 2 green chillies
- A few fresh coriander leaves
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- Salt to taste
- 1 teaspoon garam masala powder
- 2 1/2 teaspoons brown sugar
- 1 tablespoon scraped coconut
Method
- Wash and wipe dry tomatoes. Place in hot boiling water for five minutes. Drain, cool and peel off skin. Chop into one inch sized chunks.
- Peel, wash and finely chop onion and garlic. Peel, wash and shred ginger. Remove stems, deseed and cut green chillies into thin strips. Clean, wash and chop coriander leaves Heat oil in a saucepan and add cumin seeds.
- When they begin to change colour, add onion and garlic and sauté till onion is soft. Add green chillies and stir. Add ginger and tomatoes.
- Stir and add salt, garam masala powder and stir-fry for two to three minutes.
- Add brown sugar, scraped coconut and chopped coriander leaves. Serve hot.
