Ingredients list for Suran Kuttu
- 500 grams Yam (suran)peeled, cut into cubes and boiled in water
- 1 teaspoon Fresh Scraped Coconut
- 2 tablespoons Oil
- 1 teaspoon Cumin seeds
- 2-3 Dried red chillies broken
- 10-12 Black peppercorns
- a pinch Asafoetida
- 1 tablespoon Split Bengal gram (chana dal)
- 1 tablespoon Split skinless black gram (dhuli urad dal)
- 18-20 Curry leaves
- 1 teaspoon Red chilli powder
- a pinch Turmeric powder
- to taste Salt
- 1/2 cup Freshly scraped coconut
- Juice of ½ lemon
- for garnishing A fresh coriander sprig
Method
- Heat oil in a non-stick pan, add mustard seeds, cumin seeds, dried red chillies, black peppercorns, asafoetida, split Bengal gram, split black gram and curry leaves and sauté till fragrant. Add yam and mix well.
- Add red chilli powder, turmeric powder and salt and toss well. Cook for 1-2 minutes.
- Add coconut and lemon juice and mix well.
- Transfer into a serving bowl, garnish with a coriander sprig and serve hot.
