Ingredients list for Spicy Baingan-Cook Smart
- 4-5 Long brinjals cut into dices
 - 3 tablespoons Oil
 - 1/2 teaspoon Mustard seeds
 - 1 tablespoon Garlic finely chopped
 - 10-12 Curry leaves
 - to taste Salt
 - 2 Green chillies chopped
 - 2 tablespoons Castor sugar
 - 1 teaspoon Malt vinegar
 - Paste
 - 1 teaspoon Cumin seeds
 - 1 teaspoon Mustard seeds
 - 4-5 Dried red chillies
 - 1 inch Ginger
 - 4-5 Garlic cloves
 
Method
- To make the paste, grind together cumin seeds, mustard seeds, red chillies, ginger and garlic with sufficient water into a smooth paste.
 - Heat oil in a non-stick pan. Add mustard seeds and let them splutter.
 - Add garlic and curry leaves and saute till fragrant. Add brinjal and toss to mix. Add salt and ground paste, mix well and cook for 2 minutes.
 - Add green chillies and a little water, mix well, cover and cook on low heat till brinjals turn soft and pulpy and the oil separates from the masala.
 - Add sugar and malt vinegar, mix well and cook for 2 minutes.
 - Serve hot.
