Ingredients

  • 4 burger buns
  • English mustard paste as required
  • Few iceberg lettuce leaves 
  • 4 cheese slices  
  • 2 medium tomato, cut into roundels
  • Potato wedges as required
  • Tomato ketchup for serving
  • French fries for serving
    Chicken patty
  • 400 grams chicken mince
  • 1 medium onion, finely chopped
  • 1 inch celery, sliced
  • 1 tablespoon chopped garlic
  • 1½ teaspoons dried thyme leaves
  • 1½ teaspoons dried mixed herbs 
  • Salt to taste 
  • Crushed black peppercorns to taste 
  • 1 egg
  • Oil for shallow-frying
    Sauce 
  • 2 tablespoons butter
  • 1 tablespoon chopped garlic
  • 1 inch celery, sliced
  • 1 small carrot, peeled and finely chopped
  • 1 small onion, finely chopped
  • 2 tablespoons refined flour (maida)
  • 2 cups chicken stock
  • Salt to taste 
  • Crushed black peppercorns to taste 
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon chopped fresh parsley

Method

  1. To prepare chicken patties, mix together chicken mince, onion, celery, garlic, dried thyme leaves, dried mixed herbs, salt, crushed peppercorns and egg in a bowl.
  2. Divide the chicken mixture into equal portions and shape into patties.
  3. To prepare sauce, heat butter in a non-stick pan. Add garlic and sauté for 30 seconds. Add celery, carrot and onion and sauté for 1-2 minutes. 
  4. Add flour and sauté for 1-2 minutes or till golden brown. Add chicken stock, whisk and cook till the mixture thickens. 
  5. Add salt and crushed peppercorns and whisk. Add Worcestershire sauce, whisk and cook for 1 minute. Add parsley and mix well. Transfer in a bowl. 
  6. Heat some oil in another non-stick pan. Place the chicken patties and shallow-fry from both sides till golden brown. Drain on absorbent paper. 
  7. Halve the burger buns horizontally and roast them from the halved side on the same non-stick pan till golden brown.
  8. To prepare one burger, apply some mustard paste on the toasted side of the bun halves. place 2-3 iceberg lettuce leaves, one chicken patty, 1 cheese slice, 3 tomato roundels, another chicken patty, 4-5 potato wedges on the base bun. Put some sauce, cover with the top bun with toasted side downwards and secure with a satay stick. 
  9. Serve hot with tomato ketchup and French fries.
