Salsa Chicken Casserole

This dish makes a complete meal – herbed rice topped with chicken cooked salsa style and cheese and baked. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Salsa Chicken Casserole

  • to sprinkle Mozzarella cheese grated
  • Salsa Chicken
  • 250 grams Boneless chicken cut into 1 inch pieces
  • 2-3 medium Tomatoes chopped
  • ½ tablespoon Oil
  • 1-2 Green chillies finely chopped
  • 1 medium Onion chopped
  • 1 tablespoon Fresh coriander leaves chopped
  • to taste Salt
  • Juice of ½ lemon
  • Herbed rice
  • 1½ cups Cooked rice
  • 1 tablespoon Fresh coriander leaves chopped
  • 1 tablespoon Butter
  • 1 tablespoon Garlic chopped
  • to taste Salt
  • ½ teaspoon Red chilli flakes


  1. To make herbed rice, heat butter in a non-stick pan. Add garlic and sauté for 30 seconds.
  2. Add chilli flakes and coriander leaves, mix well and sauté for 1 minute.
  3. Add rice and mix well. Add salt and mix well. Remove from heat and set aside.
  4. Preheat oven to 180º C.
  5. To make salsa chicken, heat oil in another non-stick pan. Add green chillies and sauté for 5 seconds. Add onion, mix and sauté for 30 seconds.
  6. Add tomatoes, coriander leaves and salt, mix well and cook for 1 minute.
  7. Add chicken, mix and cook till it is fully done. Add lemon juice and mix. Remove from heat and set aside.
  8. Spread herbed rice in an oval glass baking dish and top with the salsa chicken. Sprinkle cheese on top, place the dish in the preheated oven and bake till the cheese melts.
  9. Serve hot.
