Ingredients
- 6 eggs hard-boiled, chopped
- 6 pavs
- 1 tablespoon oil
- 1 tablespoon butter
- 1 onion medium, finely chopped
- 2 teaspoons ginger garlic paste
- 1 medium tomato, finely chopped
- 1½ teaspoons red chilli powder
- 1½ teaspoons coriander powder
- ½ teaspoon turmeric powder
- Salt to taste
- 2 tablespoons fresh coriander leaves, chopped
- ½ cup mozzarella cheese, grated
- 5 cheese slices
Method
- Preheat the oven to 180˚C.
- Heat oil in a non-stick pan, add butter and let it melt. Add cumin seeds and saute till their colour changes. Add onion and sauté till translucent.
- Add ginger-garlic paste, mix and and sauté for 1 minute. Add tomato, mix and sauté till pulpy.
- Add red chilli powder, coriander powder, turmeric powder and salt and sauté on medium heat for 1-2 minutes.
- Add ½ cup water and mix well. Continue to cook for 2-3 minutes, stirring continuously.
- Add eggs and mix well. Add coriander leaves and mix well. Cook for 1-2 minutes.
- Halve the pav ladi, keep the top half aside and spread the egg mixture evenly on the base half.
- Sprinkle mozzarella cheese evenly. Place the cheese slices to cover the grated cheese completely. Place the top half on top and press gently. Brush butter on top and place it on a baking tray. Keep the tray in the preheated oven and bake for 10-15 minutes.
- Bring it out of the oven and place on a serving platter. Pull apart each pav and serve hot.
