Ingredients list for Peppered Prawns in Coconut Milk
- 16-20 Prawns (medium) peeled and deveined
- 3¼ cups Coconut milk
- 1 tablespoon Black peppercorns freshly crushed
- 3 tablespoons Coconut oil
- 1 teaspoon Cumin seeds
- 20 Curry leaves
- 3 medium Onions chopped
- 10 Garlic cloves chopped
- 1 inch Ginger chopped
- 1 teaspoon Turmeric powder
- 2 teaspoons Red chilli powder
- to taste Salt
- 1 tablespoon Fresh coriander leaves chopped
Method
- Heat coconut oil in a non-stick kadai and add cumin seeds. As they begin to change colour, add curry leaves and onions and sauté till the onions turn brown.
- Add garlic, ginger, turmeric powder, chilli powder and salt and sauté for 1 minute.
- Add prawns and sauté for 3-4 minutes. Add coconut milk, mix well, and simmer for 2 more minutes.
- Sprinkle crushed peppercorns and mix gently.
- Serve hot garnished with the coriander leaves.
