Peppered Prawns in Coconut Milk

Ingredients list for Peppered Prawns in Coconut Milk

  • 16-20 Prawns (medium) peeled and deveined
  • 3¼ cups Coconut milk
  • 1 tablespoon Black peppercorns freshly crushed
  • 3 tablespoons Coconut oil
  • 1 teaspoon Cumin seeds
  • 20 Curry leaves
  • 3 medium Onions chopped
  • 10 Garlic cloves chopped
  • 1 inch Ginger chopped
  • 1 teaspoon Turmeric powder
  • 2 teaspoons Red chilli powder
  • to taste Salt
  • 1 tablespoon Fresh coriander leaves chopped

Method

  1. Heat coconut oil in a non-stick kadai and add cumin seeds. As they begin to change colour, add curry leaves and onions and sauté till the onions turn brown.
  2. Add garlic, ginger, turmeric powder, chilli powder and salt and sauté for 1 minute.
  3. Add prawns and sauté for 3-4 minutes. Add coconut milk, mix well, and simmer for 2 more minutes.
  4. Sprinkle crushed peppercorns and mix gently.
  5. Serve hot garnished with the coriander leaves.
