Peanut Tamatar Sabzi

Ingredients 

  • 1/2 cup roasted peanuts, powdered
  • 3 medium tomatoes, finely chopped
  • 2 tablespoons oil
  • 2 teaspoons finely chopped garlic 
  • 1 medium finely chopped onion 
  • 1 teaspoon red chilli powder
  • 1/4 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • Salt to taste
  • A large pinch of sugar
  • 1 tablespoon chopped coriander leaves 
  • Coriander sprig to garnish
  • Rotis to serve
  • Lemon wedges to serve
  • Onion to serve

Method

  1. Heat oil in a non-stick pan, add garlic and sauté raw smell disappears. Add onion and sauté till golden brown. Add tomatoes and mix well. Cover and cook for 3-4 minutes or till the tomatoes turn soft and pulpy.
  2. Add red chilli powder, turmeric powder, coriander powder and salt and mix well. Add ¼ cup water, mix well and cook for a minute.
  3. Add sugar and coriander leaves, mix and cook for a minute. Add peanut powder and mix well. Add ¼ cup water, mix and cook for a minute. Take the pan off the heat.
  4. Transfer into a serving bowl, garnish with fresh coriander sprig and serve hot with rotis and lemon wedges and onion wedges.
