By Sanjeev Kapoor 15 Apr 2020 in Recipes Veg New Update Peanut Tamatar Sabzi Main Ingredients Roasted peanuts, Tomatoes Cuisine Indian Course Main Course Vegetarian Prep Time 6-10 minutes Cook time 16-20 minutes Serve 4 Taste Tangy Level of Cooking Easy Others Veg Ingredients 1/2 cup roasted peanuts, powdered 3 medium tomatoes, finely chopped 2 tablespoons oil 2 teaspoons finely chopped garlic 1 medium finely chopped onion 1 teaspoon red chilli powder 1/4 teaspoon turmeric powder 2 teaspoons coriander powder Salt to taste A large pinch of sugar 1 tablespoon chopped coriander leaves Coriander sprig to garnish Rotis to serve Lemon wedges to serve Onion to serve Method Heat oil in a non-stick pan, add garlic and sauté raw smell disappears. Add onion and sauté till golden brown. Add tomatoes and mix well. Cover and cook for 3-4 minutes or till the tomatoes turn soft and pulpy. Add red chilli powder, turmeric powder, coriander powder and salt and mix well. Add ¼ cup water, mix well and cook for a minute. Add sugar and coriander leaves, mix and cook for a minute. Add peanut powder and mix well. Add ¼ cup water, mix and cook for a minute. Take the pan off the heat.
