Ingredients
- 1/2 cup roasted peanuts, powdered
- 3 medium tomatoes, finely chopped
- 2 tablespoons oil
- 2 teaspoons finely chopped garlic
- 1 medium finely chopped onion
- 1 teaspoon red chilli powder
- 1/4 teaspoon turmeric powder
- 2 teaspoons coriander powder
- Salt to taste
- A large pinch of sugar
- 1 tablespoon chopped coriander leaves
- Coriander sprig to garnish
- Rotis to serve
- Lemon wedges to serve
- Onion to serve
Method
- Heat oil in a non-stick pan, add garlic and sauté raw smell disappears. Add onion and sauté till golden brown. Add tomatoes and mix well. Cover and cook for 3-4 minutes or till the tomatoes turn soft and pulpy.
- Add red chilli powder, turmeric powder, coriander powder and salt and mix well. Add ¼ cup water, mix well and cook for a minute.
- Add sugar and coriander leaves, mix and cook for a minute. Add peanut powder and mix well. Add ¼ cup water, mix and cook for a minute. Take the pan off the heat.
- Transfer into a serving bowl, garnish with fresh coriander sprig and serve hot with rotis and lemon wedges and onion wedges.
