Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Papaya Ke Launj Recipe

  • Raw papaya 500 grams

  • Onion Seeds

  • Ghee 1 tablespoon

  • Asafoetida a pinch

  • Onion seeds (kalonji) 1/4 teaspoon

  • Mustard seeds 1/4 teaspoon

  • Cumin seeds 1/2 teaspoon

  • Cloves 5-6

  • Red chilli powder (deghi mirch) 1 teaspoon

  • Turmeric powder 1/2 teaspoon

  • Sugar 3 tablespoons

  • Salt to taste

  • Aniseeds (saunf) coarsely powdered 1 teaspoon

Method

Step 1

Thinly slice the raw papaya. Parboil and drain. Set aside. Heat ghee and add asafoetida, onion seeds, mustard seeds, cumin seeds, cloves, red chilli powder and turmeric powder. Add two cups of water and stir. Add sugar and let it dissolve. Continue to cook till a syrup is formed. Add salt.

Step 2

When the sauce is done, add papaya slices and let it cook till the slices become tender. Add aniseed powder and stir. Let it cool completely before storing.
