Ingredients list for Navratan Pulao - SK Khazana
- 1 1/2 cups Long grain rice washed and soaked for 30 minutes
- 1 Medium potato cut into small cubes
- 1/2 cup Cottage cheese (paneer) cubes
- 1/2 cup Carrot cubes
- 1/2 cup Cauliflower cut into small florets
- 1/2 cup Mushrooms sliced
- 1/4 cup Soya granules soaked
- 1/2 cup Corn kernels boiled
- 1/2 cup French beans cut into strips
- 1/2 cup Green peas blanched
- 3 tablespoons Ghee
- 10-12 Cashewnuts
- 8-10 Almonds
- 15-18 Raisins
- 3-4 Cloves
- 5-6 Black peppers
- 2-3 Green cardamoms
- 2 teaspoons Caraway seeds (shahi jeera)
- to taste Salt
Method
- Heat ghee in a deep non-stick dish pan, cashewnuts, almonds and raisins and shallow-fry for 2-3 minutes. Drain into a bowl.
- Add cloves, peppercorns, green cardamom, caraway seeds, potato and cottage cheese and sauté till light brown.
- Add carrot, cauliflower, mushrooms, soya granules, corn kernels, French beans and green peas, mix and sauté for 2-3 minutes.
- Add rice, salt and 3½ cups water and mix well. Add the fried nuts, mix well, cover and cook till done.
- Transfer into a serving bowl and serve hot.
