Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Mushroom Pot Rice Recipe

  • Button mushrooms halved 8-10

  • Shiitake mushrooms halved 1/4 cup

  • Shimeji mushrooms 1/4 cup

  • Oil 2 tablespoons

  • Garlic chopped 1 tablespoon

  • Spring onion bulbs roughly chopped 2-3

  • Ginger cut into thin strips 2 teaspoons

  • Oyster sauce 1 tablespoon

  • Soy sauce 1/2 tablespoon

  • Salt to taste

  • White pepper powder 1 teaspoon

  • Cornflour slurry 1 tablespoon

  • Spring onion greens chopped 1 stalk + to garnish

  • Vinegar 1 tablespoon

  • Steamed rice 3 cups

Method

Step 1

Heat oil in a non-stick pan, add garlic, spring onion, and 1 teaspoon ginger, mix and sauté till fragrant.

Step 2

Add all the mushrooms and mix well.

Step 3

Add oyster sauce and soy sauce and mix well. Add some water and mix well. Add salt and pepper powder and mix well.

Step 4

Add cornflour slurry and some water and mix well.

Step 5

Add spring onion greens and mix well. Add vinegar and remaining ginger strips and mix well and cook till the mixture thickens slightly.

Step 6

Take rice in a serving boil, pour the mushroom mixture over it and serve hot garnished with spring onion greens.
