Ingredients
- 1 cup chopped fresh fenugreek leaves (methi)
- ¼ cup gram flour (besan)
- ½ cup whole wheat flour (atta)
- Oil for deep-frying
- Salt to taste
- ¼ teaspoon turmeric powder
- 1 teaspoon coriander powder
- 2 teaspoons ginger-green chilli paste
- 1 teaspoon red chilli powder
- 2 teaspoons white sesame seeds
- Yogurt as required
Method
- Heat sufficient oil in a kadai.
- Mix together gram flour, wheat flour, fenugreek leaves and salt in a bowl. Add turmeric powder, coriander powder, ginger-green chilli paste, chilli powder, white sesame seeds and some yogurt and knead into a stiff dough.
- Divide the dough into equal portions and shape into 1 inch thin rolls.
- Put the muthiyas in hot oil and deep-fry on medium heat till golden brown and crisp. Drain on absorbent paper.
- Serve hot.
