Ingredients 

  • 1 cup chopped fresh fenugreek leaves (methi)
  • ¼ cup gram flour (besan)
  • ½ cup whole wheat flour (atta)
  • Oil for deep-frying
  • Salt to taste 
  • ¼ teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 2 teaspoons ginger-green chilli paste
  • 1 teaspoon red chilli powder
  • 2 teaspoons white sesame seeds
  • Yogurt as required

Method

  1. Heat sufficient oil in a kadai.
  2. Mix together gram flour, wheat flour, fenugreek leaves and salt in a bowl. Add turmeric powder, coriander powder, ginger-green chilli paste, chilli powder, white sesame seeds and some yogurt and knead into a stiff dough. 
  3. Divide the dough into equal portions and shape into 1 inch thin rolls. 
  4. Put the muthiyas in hot oil and deep-fry on medium heat till golden brown and crisp. Drain on absorbent paper. 
  5. Serve hot.
