Ingredients for Masala Buns - SK Khazana Recipe

  • Refined flour (maida) 2 cups + 2 teaspoons

  • Fresh yeast 2 teaspoons

  • Castor sugar 2 teaspoons

  • Medium onion finely chopped 1

  • Red chilli flakes 1 teaspoon

  • Garlic finely chopped 1 tablespoon

  • Garam masala powder 1/2 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Fresh coriander leaves chopped 1 tablespoon

  • Salt to taste

  • Milk 1/4 cup +

  • Oil 2 tablespoons

  • White sesame seeds(safed til) to sprinkle

  • Black sesame seeds (kale til) to sprinkle

  • Butter melted to brush

Method

Step 1

Put yeast in a bowl. Add castor sugar and 2 tablespoons warm water, mix well and set aside to activate.

Step 2

Sift flour in another bowl. Add onion, chilli flakes, garlic, garam masala powder, chilli powder, turmeric powder, coriander leaves, salt, milk and activated yeast and mix well.

Step 3

Add some water and knead. Add 1 tablespoon oil and knead into a soft dough. Cover with a damp muslin cloth and set aside to prove for 10-15 minutes.

Step 4

Knock back the dough, add remaining oil and knead again. Divide into equal portions, shape into balls and transfer on a baking tray. Cover with a damp muslin cloth and set aside to prove for 20-25 minutes.

Step 5

Preheat oven to 180°C.

Step 6

Brush some milk and sprinkle white and black sesame seeds on top of the buns. Put the tray in the preheated oven and bake for 15-20 minutes.

Step 7

Brush some butter on top and serve.
