Ingredients list for Masala Anda Omelette
- 4 Egg
- 2 tablespoons Oil
- 2 medium Onions
- 1 medium Tomato chopped
- 1/2 teaspoon Coriander powder
- 1/2 teaspoon Red chilli powder
- 1/4 teaspoon Turmeric powder
- to taste Salt
- 4 tablespoons Fresh coriander leaves chopped
- 1-2 Green chillies finely chopped
- 4 Bread slices toasted
Method
- Finely chop onions. Heat 1½ tbsps oil in a non-stick pan. Add onions and sauté for 2 minutes. Add tomatoes and sauté for 2 minutes.
- Add coriander powder, ¾ tsp red chilli powder, turmeric powder, salt, half the coriander leaves, green chillies and sauté for 2-3 minutes.
- Beat eggs in a bowl and add to the pan. Drizzle remaining oil all around and cook on low heat till well set.
- Fold the omelette, cut into four equal pieces.
- Garnish with remaining coriander leaves and remaining red chilli powder and serve with toasted bread.
